You probably know it: I love pizzas I was able to eat them for a week in Rome without getting bored. Yes, I swear it’s true! After the classic pizza dough , today I offer you a sourdough pizza dough recipe . Yes because that’s it: I finally took the time to share with you our passion for sourdough! If you don’t have yours yet and want to give it a try, I’ll explain it all here:

But here we are, we tend to forget it: with leaven we do not just make leavened bread . Well, yes, we can if we want! What I mean by that is that you can also use it to do a lot of other things. Considering the hassle of finding baker’s yeast , believe me that the sourdough pizza dough imposed itself and many of you asked for it! For information, I use liquid sourdough . If you have a hard (solid) sourdough , it is said that it takes about 30% of the weight of the flour in the sourdough and adapt the amount of water. I’ll let you do the conversions.

Of course, that says use sourdough said patient : his rest time is longer than that of the pulp classic pizza (yeast-based baker so) . If you are running out of time (or patience), go see this side instead:

Side garnish , if you made the squirrel last summer by making, like me, jars of homemade tomato sauce … You are lucky! For the rest, do with what you have in the fridge. In the photo, it was my pizza in the back of the cupboard : candied peppers, capers, walnuts, cheese, aromatic herbs, grilled squash seeds… It was very nice! I don’t think we can really miss making a pizza.

Step by step method

  • Step 1 :

    In a container, put the flour, the sourdough on one side, the salt on the other then the water. Mix and add the olive oil. Knead for about 10 minutes. The dough should be smooth.

  • 2nd step :

    Form a ball and put it in a lightly floured container. Cover with a damp cloth and let stand 3 to 4 hours at room temperature. The dough can double in size.

  • Step 3:

    Place a baking sheet at the bottom of your oven (you will need a second baking sheet or wire rack for your pizza dough). Preheat the oven to 220 ° C / 250 ° C. Roll out the dough and place it on an oiled baking sheet (or covered with baking paper). Garnish as you wish. When you put it in the oven, pour a little water (5cl to 10cl) on the bottom plate to create the steam (this step is optional but helps to have a very crispy dough). Bake the pizza for about 15 to 18 minutes. Watch the cooking carefully, it will depend on the power of your oven.
